not use any wheat as a part of the process.

Make sure you are using Rice Based or Chickpea Based miso — these are
the only ones that are gluten-free!

Tempeh is usually made with gluten, so double check the ingredients.

Miso Paste (Wheat Based)
Double check the ingredients, as wheat is typically used as a fermenting
agent in this version of miso paste.
Soy Sauce (Wheat Based)
While soy sauce can be gluten free, there's a higher chance that soy

Doenjang (Korean Soy Paste)
Unfortunately most brands use wheat as an ingredient.
